		<description>Thanks for chiming in, Tami.  I&#039;m much more afraid of trans fats and industrial oils than saturated fats, but I do think it&#039;s important to eat eggs, fish and legumes, and focusing on a meatless day a week is a good way to remember to include those in my diet.</description>

Did you know that cutting back on saturated fats by 15% - which is equivalent to going meatless one day a week - reduces your risk of heart disease, cancer, diabetes, and stroke? As you mentioned it can also save you quite a bit of money.

We are a big fan of lentils around here (I especially love how quickly they cook, compared to other legumes) so I&#039;ll have to check out those recipes!  We&#039;ve also had great success making lentil tacos - simply substituting cooked lentils for ground meat and stirring up with taco seasoning.  Yum!
