Lucy
Thank you for that! I know the microwave thing is one of the more controversial topics on KS...and sometimes I wonder if it's worth it...but I suppose it probably won't kill us either way, eh? ;) Thanks for the kind compliment! :) katie

I really love your blog (LOVE IT), but I really think the research doesn't back up this claim. The New York Times took a look at the research and summed it up here: http://www.nytimes.com/2006/10/17/health/17real.html?adxnnl=1&adxnnlx=1312901206-1lqk824Xtf2TECYwoYFplg

But I will remain a faithful reader!

Now it's July 2011 & I just found your website- thank goodness b/c I have, like you, been putting my veggies in the microwave- just like my mom did for us growing up! In fact, she cooked everything in her new Amana microwave & even took a microwave cooking class back in the '80s at the local grocery store! Weird! But thankful for this site- now to find a steamer basket!

Brittan,
I think one of the sources at this post: http://www.kitchenstewardship.com/2009/05/07/minding-the-microwave-research-notes/ will get you that citation, or at least another post in Mind the Microwave in May series.

Katie,

Could you send me a link to the research you cite in this blog post. I would like to read up on what the scientific basis is for the claim that broccoli loses up to 85% of its nutritional value when microwaved. I don't actually microwave broccoli myself, I prefer to roast most veggies, but I am interested on how such research was conducted (I am a scientist myself, if you can't tell :-) Thanks!

Hey Katie - have you heard of patapar paper?

I first heard about it when I read Plan-D: The Amazing Anti-Diet by Dee McCaffrey. Basically, it helps retain vitamins and minerals typically lost when you boil or steam veggies.
