Bean and Veggie Meal Plan Analysis no. 2

The second installment of the Bean and Veggie Meal Plan Analysis:

Kris at Houston Mom has graciously offered to let me analyze her recent meal plan.  She doesn’t much like meal planning, because she likes to go with the flow and sometimes finds herself wasting food in the fridge because something is partly ready to go and she changes her plans.  I’ll do my best to point out some places where Kris could include more beans and veggies in her week (if she makes what she writes down!).  My voice is in italics.

Monday

  • spinach omelettes, bagels and berries
  • cheese pizza
  • roast, rice, green beans and salad
    Always easy to include legumes in with rice, and if it’s brown rice, you’ve got yourself a complete protein.  Find 3 different beans and rice choices in my Recipes tab.  Well done in including spinach with your eggs!

Tuesday

  • fried eggs, bagels and fruit
  • turkey lunch meat, homemade flour tortillas and apples
    Might be able to include some cold beans – garbanzo or great northern? – in with the tortillas or on top of a lettuce salad.
  • Grilled chicken tenders, quinoa and sauteed spinach

Wed

  • onion and egg fritatta, bagels and fruit
  • garbanzo beans,  rice and raw veggies
    Well done!
  • beef empanadas and salad
    If the empanadas don’t already include beans, try some refried beans, either next to or inside the empanadas, or even easier, just throw some black beans in.

Thursday

  • fried eggs, whole wheat bread and fruit
  • whole wheat grilled cheese and raw veggies
    Spread leftover refried beans on the grilled cheese.
  • chicken and shrimp gumbo and salad
    Cold beans on the salad too!  Kidney sound like a good match for shrimp.  Doing a great job getting raw veggies in the meal plan!.

Friday

  • egg tacos on homemade whole wheat tortillas and fruit
  • grilled hot dogs, baked beans and corn
  • roasted orange pepper pizza on whole wheat crust and salad
    What can I say?  Orange pepper pizza is a great way to get that super food into a yummy meal!

    Thanks so much! I need to serve more brown rice…. I have it in my pantry. Been defaulting to white lately b/c I get less complaints. But if they get used to brown, maybe they’ll learn to love it too.

    I also like your suggestion of using Northern beans. My exposure to beans in Texas is primarily pinto, black and red…. with a few garbanzo here and there.

    I love your menu redo idea. Now if you could just come to my house and cook it… life would be perfect! Thanks so much.
