Wow! I was looking for a recipe to use up these beans in the back of my pantry and I really hit the jack pot here! I will be back for more great stuff and I love all the links to other blogs too. I really need the frugal recipes cooking for a houseful of kids on one income and triplets in diapers.

I don't know if this is REALLY a recipe, but this is how i make the beans i eat in my bean burritos:

i heat up 1/4 cup of water in a skillet, add curry powder, chili powder, and cumin, and add the canned rinsed beans (kidney, cannelini, chickpea) and stir stir stir until the water is almost evaporated and everything becomes saucy. eat plain or in a burrito! =D

I love beans and one of my favorite recipes is Chicken and Black Bean Enchiladas
1-2 chopped, cooked chicken breasts (about 1 1/2 cups chopped, cooked chicken)
2 cans of black beans
1 cup salsa
1 teaspoon cumin
1 teaspoon garlic powder or 1 clove minced garlic
1 cup shredded cheese, divided
8-10 large flour tortillas
Mix all ingredients except tortillas in a large bowl, using only 3/4 cup of the cheese. Spoon mixture onto each tortilla with a slotted spoon and roll tightly. Place filled tortillas seam side down in a 13x9 baking dish. Pour juice left over from the filling on top of the enchiladas and top with remaining cheese. Bake at 375 F. for about 20 min covered with foil then about 5 min. uncovered. Serve with sour cream.

Kanmuri, I hear you on the texture. So for our chili, I mash or puree the beans. I do the same thing when I make black beans with Mexican dishes. We like them a lot better that way!
