Here are my best guesses:
1.  Pumpkin pie spice would change it a bit, but probably not for the worse!
2.  I have no idea on the syrup - just make sure to still use the pumpkin puree if you try it.
3.  mini loaf pans = definitely, just reduce the time
4.  Add ins - chocolate and nuts are always awesome!  :)
