Monday Mission: Review Week, Focus on Grains

It’s review week at Kitchen Stewardship…sort of.

Every once in a while I like to take a break from new Monday Missions and give you a chance to look back over the list to grab one you may have missed, whether it’s from before you discovered KS or just one of those busy weeks that wasn’t the right time.

This week I’ll ask you to take a particular focus on grains, since for the next two weeks I’m going to be breaking down my family’s experience with going grain-free, then gluten-free, for all of Lent. We did this in the fall, but this time, we included the kids.

I’ll share a few new recipes (like the grain-free apple flax muffins, above), tons of resources for grain-free and gluten-free living, awesome giveaways and even how I ended up using that cow’s tongue in my freezer. (When you cut grains, you eat more meat. It just makes sense.) Winking smile

Not every family needs to do something as drastic as grain-free or gluten-free, but I bet there’s a step you’d like to take with grains, whether it be making your own bread, soaking whole grains, or just cutting down on the grains to decrease overall carb load.     I have a question about soaking oatmeal. My kids do NOT like the taste of the oatmeal if I soak it with lemon juice (and to be honest….neither do I). Does the whey leave a sour taste to the oatmeal and can/should be oatmeal be drained/rinsed after soaking? Any tips to eliminate the sour taste are SOOOO appreciated.

    By the way, I LOVE that you update your posts as new information becomes available (as in the soaking oatmeal post). It keeps all of your content relevant and is something not every blogger does. I appreciate you for that! :)

    We actually found that lemon juice leaves the least sour taste, but if you do use whey or anything, you can certainly rinse the oats before using. I’ve done it and it comes out fine (and not losing any health benefit).
    Buttermilk is a good choice instead of whey as it’s milder and less cheesy, esp. if you’re going to leave it in.

    How interesting! You’ve tried whey, too? We love this baked oatmeal, which uses all buttermilk (I usually use yogurt) to soak, and there’s no sour taste at all (might be b/c of the 1/2 cup sweetener…). It’s really, really, yummy. ;) Katie

    Yes, I was worried that it would take away some of the ability to thicken, but it worked great and my kids didn’t complain of the sourness like they normally would. I’ve used yogurt, kefir, buttermilk, whey from all those, lemon, lime, you name it. :)
    My reason for trying different ways is because I prefer not to give them any sugar, so I needed it to be palatable without.

    Two tips for making the oatmeal a bit sweeter without any sweetener: add unrefined coconut oil and cinnamon. So yummy and healthy! Enjoy! :) Katie

    I just figured out what you meant by “cheesy!” You’re using cheese whey, yes? I only use yogurt whey, which is much, much milder, and my hunch is also that it’s more effective b/c of the lacto-fermentation properties. Thanks for hopping in on the conversation to help out! :) Katie

    I agree, yogurt whey is very mild. My kids most complain when I use kefir whey or clabbered milk whey. It tastes cheesy to them! It is “farmers cheese” i guess :)
    I totally agree with your cinnamon tip! I haven’t tried adding coconut oil, though but that would be good. I do add LOTS of pastured butter and cream. Mmm.

    Whey is way better then lemon juice – pun intended. ;) If only 1 Tbs whey/cup water and 1 cup water per cup oats is used for the soak, you hardly notice any flavor if at all. With that ratio, there’s really nothing to pour off after 12 hours b/c it’s all absorbed, so just add another x cups water to make the 2:1 ratio and cook. I think you’ll like it much better!
