Cheesy Rice with Tomatoes

Adapted from More with Less Cookbook

This is a great side dish that is really easy to make.  Try it with Chickpea Wraps, hamburgers, or anything else that might tempt you to rely on packaged rice dinners or boring plain rice.

Saute:
2 T. oil
1 medium chopped onion
2 stalks celery, chopped (optional)
1/2 green pepper, chopped (optional)

Add:
1 can diced (or petite diced) tomatoes, plus a little juice
2 c. cooked rice*
1 to 1 1/2 cup shredded cheese (sharp cheddar gives a nice zip)
1 tsp. salt
1/2 tsp pepper

Cover and simmer until cheese is melted.

*This is a great way to use up leftover rice OR do a cook once, serve twice by making more rice than you need the day before.
