Confetti Rice Squares (with Creamed Chicken)
Combine:
3 c. cooked rice
1 c. shredded cheese
½ c. chopped parsley
½ c. chopped onion
½ c. chopped red pepper
1 tsp. salt
Add:
3 beaten eggs
1 c. milk
Pour into 8×8 buttered glass dish. Bake 60-70 minutes at 325 degrees or until knife inserted near center comes out clean. Cut into squares and serve with creamed chicken.
*a great way to use leftover rice! Very pretty for presentation.

This sounds good, but do you think it would work without the cheese and with a milk substitute? I’m always looking for good ideas for using rice!

Jennifer,
I don’t have much (any) experience with milk substitutes, so go with what you’ve done before, like if you’ve used them successfully in a casserole or to make a rice dish. The cheese definitely isn’t necessary, especially if you’re putting chicken over it – the recipe for creamed chicken has milk in it, of course, but you could just use chicken stock and thicken it up a little with flour or cornstarch for a very similar result.
