Ingredients

  • 2 tomatoes, diced
  • 2 avocados, peeled, pitted, diced
  • 1/2 c. cilantro, roughly chopped
  • Juice from 1/2 lime
  • 1 tsp. cumin
  • salt to taste
  • 5 hard boiled eggs
  • Tortilla chips (optional)

Instructions

  1. Mix the tomatoes, avocados, cilantro, lime juice, cumin and salt in a bowl and stir together.
  2. Add a little of the avocado and tomato salad to each plate.
  3. Nestle an egg in the center and add chips and cilantro around the plate.
