A quick, kid-friendly breakfast to fuel your day!


Ingredients

  • 1 slice of bread
  • 1 large free-range egg

  • butter or coconut oil for cooking egg
  • 2 Tbs. pizza sauce OR 1 Tbsp. ketchup + 1/4 tsp. basil + pinch of salt
  • 2 tsp. non-fortified nutritional yeast
  • 1/4 c. shredded mozzarella cheese or dairy-free cheese
  • (optional) pepperoni, ham, sausage, chicken, ground beef ,peppers, onions, olives

Instructions

  1. Place slice of bread on a small baking sheet.
  2. Top with pizza sauce or ketchup + basil + salt.
  3. Top with nutritional yeast. Set aside.
  4. Heat a small skillet over medium heat.
  5. Whisk egg with salt.
  6. Add butter to hot pan.
  7. Add egg and scramble.
  8. Top bread with scrambled egg.
  9. Top egg with cheese and any other desired toppings.
  10. Bake at 400-degrees F or broil for 5-10 minutes, until cheese is melted and bubbly.
  11. Serve immediately.

Notes

  • This recipe serves one. You can scale it to serve as many as you need.
  • If you want to bump up the nutrition you can add extra nutritional yeast directly to the eggs while they are cooking.
