- 1 slice of bread
- 1 large free-range egg

- butter or coconut oil for cooking egg
- 2 Tbs. pizza sauce OR 1 Tbsp. ketchup + 1/4 tsp. basil + pinch of salt
- 2 tsp. non-fortified nutritional yeast
- 1/4 c. shredded mozzarella cheese or dairy-free cheese
- (optional) pepperoni, ham, sausage, chicken, ground beef ,peppers, onions, olives
Instructions
- Place slice of bread on a small baking sheet.
- Top with pizza sauce or ketchup + basil + salt.
- Top with nutritional yeast. Set aside.
- Heat a small skillet over medium heat.
- Whisk egg with salt.
- Add butter to hot pan.
- Add egg and scramble.
- Top bread with scrambled egg.
- Top egg with cheese and any other desired toppings.
- Bake at 400-degrees F or broil for 5-10 minutes, until cheese is melted and bubbly.
- Serve immediately.
Notes
- This recipe serves one. You can scale it to serve as many as you need.
- If you want to bump up the nutrition you can add extra nutritional yeast directly to the eggs while they are cooking.
