Hey, the recipe book look good, though are those recipes vegan?
Some of them are or could be modified easily. About 1/3 of the recipes contain meat and many of the others contain chicken stock, milk, or cheese which could be substituted with vegan options. Often the cheese is a topping so you could omit it. A couple of the recipes include eggs. You could definitely make many of the recipes work, but it is not a vegan cookbook. I hope that helps!
This is a fantastic cookbook.
My favorite recipe is for the black bean brownies. They truly are fudgy. I have a kid who doesn’t eat unless she’s watched, but Katie helps me cheat with these brownies. The sugar content is low enough that I can justify eating these much more often than we normally do. The protein content is high enough that it’s almost like a 2nd main dish, but it’s tasty enough that I know that she’ll eat these even without me watching her.
I can’t thank you enough for the peace of mind that this recipe gives me. The rest of the book is just a bonus.
