Recipe Notes on Porridge
If you’ve never used coconut flour before, this is a nice recipe to try it with. You can experiment with a grain-free breakfast without having to worry about baking or wasting a lot of time or expensive ingredients on something you’re not sure your family will go for. It’s nice to be able to taste as you go, which doesn’t work with baking.
With coconut flour, a little goes a long way, so that bag, although expensive, should last a while. You can purchase it online at Amazon and Tropical Traditions. Prices are often changing, so it’s worth checking multiple brands (and watch for free shipping about once a month at TT).
Many recipe testers also pointed out how great this one is as a baby or toddler food – nutrient dense yet, you know, mooshy.
That reminded me of our Squooshis, which we typically only use for smoothies, and I got out of the rut:

For our next road trip that starts in the morning, this is definitely going to be my kids-eat-in-the-car strategy! I’ll probably have to pack two for each kid.
