With four kids and a busy schedule, I’m always on the lookout for breakfast ideas that are easy, nourishing, and budget-friendly. Of course they have to taste good too!
My kids love any kind of breakfast bar recipe option. That usually means homemade granola bars, breakfast cookies, or even breakfast cupcakes!
If you too love quick, easy breakfast options, then you are in luck. I have a new option to add to your rotation – Almond Joy breakfast bars!

Breakfast Bar Recipe Kids Love
These bars are a bit different than your typical oat-based granola bars. The base layer is made from eggs, cocoa, and almond butter for a brownie-like texture. The topping is a creamy, lightly-sweetened coconut mixture that resembles the filling of an Almond Joy candybar.
Top it all with chocolate chips and you have a delicious breakfast that tastes like a treat. But you can feel good about serving it.
The soft texture makes this bar easier to eat for younger kids or those that struggle with hard textures.

Protein Rich Breakfast Bar
Serving sufficient protein for breakfast can be a challenge, especially if you have a child that does not like eggs or yogurt (my go-to quick breakfast proteins).
Almond Joy breakfast bars have you covered. The bottom layer contains eggs, nuts, and optional collagen (use the coupon KS10 for 10% off!). The coconut mixture contains milk and collagen. All combined that equates to decent protein.
Not only is there a combination of animal and plant protein, the bars contain healthy fats, and complex carbohydrates. This equates to a well balanced breakfast option to help keep blood sugar stable throughout the day.
Family Friendly Breakfast Idea
While the base recipe for Almond Joy bars does contain nuts and dairy, they can be easily modified. Almond butter can be replaced by sunflower seed butter. Any milk alternative (oat, rice, coconut, etc.) can replace the milk.
This breakfast bar recipe is naturally gluten free. If you don’t tolerate corn, arrowroot or tapioca flour can easily be swapped.
Basically Almond Joy breakfast bars can be adapted to meet almost any dietary needs.

How to Make Almond Joy Breakfast Bars
Almond Joy breakfast bars combine a chocolate layer with a coconut layer. Optionally you can add whole or slivered almonds (use the code STEWARDSHIP for 10% off at that site!) to the chocolate layer.
These breakfast bars are easy enough for kids to make – everything is mixed by hand. Plus you can make them ahead and store them in the freezer for an easy grab-and-go breakfast or snack anytime.
I must warn you that they will go quickly. While recipe creating I made multiple batches to get them just right. My kids proceeded to eat them all! So you may want to double or triple the recipe. Or put some of them in the freezer right away for another day.

These healthy breakfast bars are a great, kid-friendly breakfast!
Ingredients
Layer 1:
- 1/4 c. cocoa powder (use the code STEWARDSHIP for 10% off at that site!)
- 3 eggs
- 1 Tbs. almond butter (or peanut butter or sunflower seed butter)
- 6 Tbs. honey
- 4 Tbs. cornstarch
- 1/2 tsp. salt (Use the code kitchenstewardship for 15% off of your first purchase)
- 1/2 tsp. baking powder
- 1/2 tsp. vanilla
- 1 Tbs. collagen (optional)
Layer 2:
- 3/4 c. unsweetened shredded coconut
- 2 Tbs. collagen
- 3 Tbs. milk (or milk substitute)
- 2 Tbs. honey
- 2 Tbs. chocolate chips
Instructions
- Grease or line with parchment paper an 8×8-inch baking pan.
- Heat oven to 350-degrees F.
- Combine the coconut, 2 Tbs. collagen, and milk. Let soak while you prepare the first layer.
- In a medium bowl combine the layer 1 ingredients. Mix until smooth.
- Pour batter in prepared pan and bake 10 minutes.
- Meanwhile add the 2 Tbs. honey to the coconut mixture. Stir to combine.
- After ten minutes, remove the pan from the oven and gently spread the coconut mixture on top (some of the coconut may sink in – that’s OK).
- Sprinkle chocolate chips on top.
- Return to the oven and bake 20 minutes.
- Allow bars to cool completely and cut into squares.
- Store in a sealed container on the counter for up to a week or in the freezer for up to a year.
Notes
To add more of the Almond Joy feel, you can add whole or slivered almonds (use the code STEWARDSHIP for 10% off at that site!) to the first layer (before baking) or to the top when you add the chocolate chips.
Plain or vanilla collagen may be used. If using vanilla, you may want reduce the honey in the topping to 1 Tbs.

Family Friendly Breakfast Idea Without Eggs
With the increasing price of eggs, you may be looking for ways to cut costs. There are only three eggs in this recipe, so you don’t have to break the bank. But if you want to skip the eggs completely in this breakfast bar recipe, simply replace them with a half cup milk and two teaspoons of gelatin (use the coupon KS10 for 10% off!). Gelatin is my preferred egg substitute. Flax eggs would also make a good egg replacement.
You’ll still get some added protein, and the bars will still be delicious!
